Quay, which was the only restaurant to have ever held three hats, the highest Good Food Guide ranking, for 24 consecutive years, shut its Circular Quay venue first, hosting its final service on Valentine's Day 2026.

The owner of the harbourside restaurant, Leon Fink, pointed to rising operational costs, lagging tourism, and the suburbanisation of the hospitality sector.

In 1988, it began as Bilson's.
In 1999, Quay arrived.

From the very beginning, this was a place built on care, for flavour, for craft, and for the people who bring both to life. The name may have changed, but the intention never did.

Over the years, Quay became more than a restaurant. It was a destination, a room where milestones were celebrated, new experiences discovered, and memories made. Every dish, every service, every moment was shaped by a quiet commitment to excellence.

As we close this chapter, I want to thank each and every one of you who shared this journey with us. Your support, your curiosity, and your presence have meant the world, and we are deeply grateful.
